I know what you need for your Thursday!
A good, comfort food recipe! I have just the thing.

Chicken Soup for the Crockpot

  • Cubed chicken (about half a cup)
  • One can Cream of chicken soup
  • One can Cream of something else soup. Mushroom, potato, broccoli…whatever you want. We use Potato.
  • 1 bag of frozen veggies
  • (Optional) We use Bok Choy!! It really brings out the flavor and it’s awesome.
  • 1 can of water or chicken broth

Cook the above mixture for 4-8 hours depending on the intensity of the setting.ย  When have about a half hour left on it, dump shredded cheese on top and let it melt.ย  (We used 2 c Cheddar) Stir it in!

Serve over rice.

Before this recipe, we had never used Bok Choy before… I didn’t even know what it was! For those of you who don’t know/remember, I used to compare Adelynn’s size to fruit/veggies while pregnant with her. One week, she was the size of bok choy from crown to rump.


After we bought it, we had no idea what to do with it, so we washed it, chopped it, and dumped it on in = best. decision. ever!

It’s such a simple recipe. But so yummy. If you need to make more, add more veggies and rice or an extra can of soup, and that will stretch your recipe further!

    Love your pictures, and that is a really cute idea to compare them to fruit/veggies! I have seen the online ones, but never thought to take a picture with the item! I might have to do that when we have another little one!

  2. mmmm I am so in the mood for something warm and cozy like that! Btw, I loved seeing your posts with the food items showing the size of the baby! So fun. I discovered swiss chard about a year and a half ago and LOVE it in my soups! I’m assuming it’s similar to bok choy, I’ll have to try that soon!

    Have you had baby bok choy before?! It’s even better! It’s really good steamed in a wok with chicken stock and snow peas. (p.s. I’m a ‘penpal/blogger friend/internet friend’ of tonyas)

    • We used a full size bok choy when we had it during pregnancy, then we have used baby bok choy ever since because we couldn’t find the full size one again! (We moved towns since then). That is a great idea to have it with chicken stock and snow peas! We chopped up the rest to have raw in a salad, but next time I will have to remember that. Nice to meet you mamabuckwheat, thanks for your tips! ๐Ÿ™‚
