Mouth Watering Monday

I think it is past time for a recipe post! My cousin Megan gave me this recipe, and I believe it came from Martha Stewart originally. We made it for dinner the other night. I know I do not take pretty food pictures, but trust me, it puts an awesome spin on the traditional Chicken Salad Sandwich recipe. MMMM.


Avocado Chicken Salad


Dressing :
Blend all in blender or food processor …
2 avocados
1 cup buttermilk
1 scallion (white and light green only)
1/4 cup packed fresh parsley leaves
1/4 cup packed fresh mint leaves
3 Tbsp lemon juice
1/2 cup water
salt and pepper to taste

3 1/4 cups chopped cooked chicken
2 celery stalks, finely chopped
1 large shallot, finely chopped
1 avocado, diced small
3/4 cup avocado dressing
Salt and pepper to taste
Combine all and serve on bread or toast

I made buttermilk using milk and vinegar. We didn’t have a scallion or shallot. So we did without. The only change I would make would be less mint leaves next time around. We just poured the extra dressing on along with the salad.
